Ingredients:

  • Pork tenderloin (400g)
  • Peaches, peeled and diced (2 medium)
  • Pasta of your choice (300g)
  • Red onion, thinly sliced (1)
  • Garlic, minced (2 cloves)
  • White wine (1/2 cup)
  • Chicken broth (1 cup)
  • Fresh thyme leaves
  • Salt and pepper to taste
  • Olive oil

Start by seasoning the pork tenderloin with salt and pepper. In a large skillet over medium-high heat, sear the pork until it’s browned on all sides, then transfer it to a plate and set it aside.

In the same skillet, add a bit of olive oil and sauté the sliced red onion until it’s soft and translucent. Add the garlic and cook for another minute until fragrant. Deglaze the pan with white wine, making sure to scrape up all the flavorful brown bits from the bottom.

Next, add the diced peaches and fresh thyme to the skillet. Allow the mixture to simmer for a few minutes until the peaches are slightly softened. Pour in the chicken broth and return the pork to the skillet. Cover and let it simmer for about 15-20 minutes until the pork is cooked through.

While the pork is simmering, cook the pasta according to the package instructions until al dente. Once the pork is done, remove it from the skillet and slice it into medallions.

Serve the Peachy Pork over a bed of pasta, spooning the peach mixture on top. Garnish with additional fresh thyme leaves for a pop of color and flavor.
