Today’s Special: Spicy Mango Coconut Curry

As the weather starts to cool down, I find myself craving warm, comforting dishes that pack a punch of flavor. Today, I’m excited to share with you my latest creation: Spicy Mango Coconut Curry. This dish combines the sweet and tangy flavors of mango with the creamy richness of coconut milk, all brought together with a kick of spicy heat. It’s the perfect balance of sweet, savory, and spicy that will leave your taste buds singing.

Ingredients:

  • 1 ripe mango, diced (approx. 200g)
  • 1 can of coconut milk (400g)
  • 200g of tofu, cubed
  • 2 tbsp of red curry paste
  • 1 bell pepper, sliced (approx. 100g)
  • 1 onion, sliced (approx. 150g)
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • Zest of 1 lime
  • Handful of cilantro, chopped
  • Salt and pepper to taste
  • Cooking oil

Kitchen Tools:

To start, heat some oil in a large skillet over medium heat. Add in the minced garlic, grated ginger, and sliced onions. Sauté until the onions are translucent and fragrant. Next, add in the red curry paste and cook for another minute to bloom the spices.

Once the curry paste is fragrant, pour in the coconut milk and stir well to combine. Add in the diced mango, sliced bell pepper, and cubed tofu. Let the curry simmer for 10-15 minutes until the flavors have melded together and the vegetables are tender.

Season the curry with salt, pepper, and lime zest to taste. Give it a final stir and sprinkle with chopped cilantro before serving. This Spicy Mango Coconut Curry pairs perfectly with steamed rice or naan bread.

The approximate total weight of the cooked dish is 900g, with 4 servings at 225g each. Each serving is approximately 350 calories.

One clever tip for this dish is to add a sprinkle of toasted coconut flakes on top for an extra crunch and burst of coconut flavor.
