Mushroom Risotto with Pumpkin Spice

Today, I’m excited to share a cozy and flavorful dish that’s perfect for the fall season: mushroom risotto with a unique twist of pumpkin spice. This dish combines the earthy and umami flavors of mushrooms with the warm and aromatic notes of pumpkin spice, creating a comforting and unexpected flavor profile.

Ingredients:

  • Arborio rice (250g)
  • Mushrooms (200g, sliced)
  • Onion (1, diced)
  • Garlic (2 cloves, minced)
  • Vegetable broth (1L)
  • Pumpkin spice blend (2 tsp)
  • Parmesan cheese (50g, grated)
  • Butter (2 tbsp)
  • Olive oil (2 tbsp)
  • Salt and pepper to taste

  • Chef’s knife
  • Cutting board

To start, heat the vegetable broth in a saucepan over low heat. In another large saucepan, heat olive oil and 1 tablespoon of butter over medium heat. Add the diced onion and minced garlic, cooking until softened. Stir in the Arborio rice and cook for 1-2 minutes until slightly toasted.

Begin adding the warm vegetable broth to the rice mixture, one ladle at a time, stirring continuously until the liquid is absorbed before adding more. This process will take about 20-25 minutes until the rice is cooked through and creamy.

In a separate pan, melt the remaining butter and sauté the sliced mushrooms until golden brown. Season with salt, pepper, and the pumpkin spice blend for a warm and fragrant twist. Add the cooked mushrooms to the risotto, along with the grated Parmesan cheese, stirring until well combined.

Serve the mushroom risotto with pumpkin spice hot, garnished with additional Parmesan cheese and a sprinkle of pumpkin spice on top. This dish weighs approximately 1200g after cooking, serves 4, with each serving weighing 300g. One serving of this creamy and flavorful risotto is approximately 350 calories.
