Today’s Recipe: Exotic Thai Pineapple Fried Rice

As the weather turns cooler, I find myself craving warm, comforting dishes with a touch of exotic flavor. That’s why I’m excited to share my recipe for Exotic Thai Pineapple Fried Rice today. This dish is a perfect blend of sweet and savory, with a hint of spice that will transport you straight to the streets of Bangkok.

Ingredients:

  • jasmine rice (300g, cooked and cooled)
  • fresh pineapple chunks (200g)
  • medium shrimp (150g, peeled and deveined)
  • cashews (50g, toasted)
  • green onions (50g, chopped)
  • red bell pepper (100g, diced)
  • eggs (2, beaten)
  • garlic (3 cloves, minced)
  • soy sauce (50ml)
  • fish sauce (30ml)
  • curry powder (10g)
  • chili flakes (5g)
  • lime wedges (for serving)

Kitchen Tools:

  • wok
  • rice cooker
  • chef’s knife
  • cutting board
  • skillet
  • spatula

To start, heat your wok over medium-high heat and add a splash of oil. Once hot, add the minced garlic and sauté for a minute until fragrant. Next, add the shrimp and cook until they turn pink and opaque. Remove the shrimp from the wok and set aside.

In the same wok, add the diced bell pepper and cook until slightly softened. Push the bell pepper to one side of the wok and pour in the beaten eggs. Scramble the eggs until cooked through, then mix them with the bell pepper.

Add the cooked rice, pineapple chunks, green onions, and cashews to the wok. Stir well to combine all the ingredients. In a small bowl, mix together the soy sauce, fish sauce, curry powder, and chili flakes. Pour this sauce over the rice mixture and stir until everything is evenly coated.

Return the cooked shrimp to the wok and toss everything together. Cook for another few minutes until everything is heated through. Serve the Exotic Thai Pineapple Fried Rice hot, garnished with lime wedges on the side for squeezing.

This dish serves 4 people and each serving weighs approximately 400g. One serving of this dish is around 450 calories.

One unusual tip for this recipe is to use day-old rice for the best results. Cold, day-old rice works perfectly for fried rice as it has a firmer texture and doesn’t clump together like freshly cooked rice.
