Mexican-Inspired Quinoa Stuffed Bell Peppers

Today I’m excited to share a recipe that was inspired by my recent trip to Mexico. The vibrant colors and bold flavors of Mexican cuisine left a lasting impression on me, and I couldn’t wait to recreate some of those delicious dishes at home. These Mexican-inspired quinoa stuffed bell peppers are a perfect balance of spicy, savory, and fresh flavors that will transport you to a sunny beachside cafe with every bite.

Ingredients:

  • 4 large red bell peppers
  • 1 cup quinoa
  • 1 can (400g) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup salsa
  • 1 ripe avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

To start, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.

In a medium saucepan, cook the quinoa according to the package instructions. Once cooked, transfer the quinoa to a mixing bowl and add the black beans, corn, salsa, diced avocado, cilantro, lime juice, cumin, paprika, salt, and pepper. Mix everything together until well combined.

Spoon the quinoa mixture into each bell pepper until they are filled to the top. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.

Once the peppers are cooked, remove them from the oven and let them cool slightly before serving. These Mexican-inspired quinoa stuffed bell peppers are best enjoyed warm, topped with a dollop of sour cream or a sprinkling of cheese.

This recipe makes 4 servings, with each stuffed bell pepper weighing approximately 300g. One serving is about 400 calories.

A clever tip for extra flavor is to mix some shredded Mexican cheese blend into the quinoa filling before stuffing the peppers. The melted cheese adds a gooey, savory element that takes this dish to the next level.
