Cozy Stuffed Acorn Squash Recipe

Autumn-Inspired Stuffed Acorn Squash

Ingredients:

  • 2 medium-sized acorn squash
  • 1 cup quinoa
  • 1/4 cup dried cranberries
  • 1/3 cup chopped walnuts
  • 1/2 cup crumbled goat cheese
  • 2 tbsp maple syrup
  • 2 tbsp fresh thyme leaves
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Start by preheating your oven to 400°F (200°C). Cut the acorn squash in half lengthwise and scoop out the seeds with a spoon. Place the squash halves on a baking sheet, drizzle them with 1 tbsp of olive oil, and season with salt and pepper. Roast them in the oven for about 30-35 minutes, or until the squash is tender.

While the squash is roasting, cook the quinoa according to the package instructions in a medium saucepan. Once cooked, fluff the quinoa with a fork and transfer it to a mixing bowl. Add in the dried cranberries, chopped walnuts, crumbled goat cheese, maple syrup, fresh thyme leaves, and the remaining 1 tbsp of olive oil. Season with salt and pepper, then mix everything together until well combined.

Remove the roasted squash from the oven and fill each half with the quinoa mixture. Return the stuffed squash to the oven and bake for an additional 10-15 minutes, or until the filling is heated through and the cheese is melted.

Once done, remove the stuffed acorn squash from the oven and let it cool slightly before serving. Enjoy the warm, comforting flavors of this dish with your loved ones on a chilly autumn evening.
