  • 2 medium sweet potatoes, peeled and diced
  • 4 slices of bacon, cooked and crumbled
  • 1/2 red onion, thinly sliced
  • 2 tbsp white balsamic vinegar
  • 1 tbsp honey
  • 1 tsp dijon mustard
  • 3 tbsp olive oil
  • Salt and pepper to taste

For this recipe, you will need the following kitchen tools:

  • whisk
  • saute pan

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Place the diced sweet potatoes on the prepared baking sheet and drizzle with 2 tablespoons of olive oil, salt, and pepper. Roast in the oven for about 25-30 minutes, or until the sweet potatoes are tender and caramelized.

While the sweet potatoes are roasting, cook the bacon in a saute pan until crispy. Remove the bacon from the pan and crumble it into small pieces. In a mixing bowl, whisk together the remaining olive oil, white balsamic vinegar, honey, dijon mustard, salt, and pepper to create the dressing.
