Hey there, foodies! Today I’m sharing my latest creation, a mouthwatering Spicy Coconut Shrimp Curry. This dish is perfect for those chilly nights when you crave something warm and comforting with a touch of heat. I hope you enjoy making it as much as I did!

Ingredients:

  • 300g shrimp, peeled and deveined
  • 400ml coconut milk
  • 2 tbsp red curry paste
  • 1 red bell pepper, sliced
  • 1 onion, thinly sliced
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 lime, juiced
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste

To start, heat a saucepan over medium heat and add a splash of oil. Sauté the sliced onion until it becomes translucent, then add in the minced garlic and grated ginger. Cook for another minute until fragrant. Add the red curry paste and stir to coat the onions.

Next, pour in the coconut milk and let the mixture simmer for a few minutes to allow the flavors to meld together. Add the sliced bell pepper and season with salt and pepper to taste. Let the curry simmer gently until the bell pepper is tender.

In a separate skillet, heat some oil over medium-high heat. Add the peeled and deveined shrimp to the skillet and cook until they turn pink and opaque. Once cooked, add the shrimp to the coconut curry sauce and stir well to combine. Squeeze in the juice of one lime for a fresh citrus kick.

Serve the Spicy Coconut Shrimp Curry hot over steamed rice and garnish with fresh cilantro. The aroma of the coconut milk and spices will tantalize your taste buds, and the heat from the red curry paste will warm you up from the inside out.
