Aromatic Roasted Pumpkin and Rosemary Risotto

Today, I am sharing a cozy and comforting dish that reminds me of crisp autumn evenings and warm family gatherings. This aromatic roasted pumpkin and rosemary risotto is a perfect way to celebrate the season and impress your loved ones with a unique and flavorful meal.

Ingredients:

  • Arborio rice (300g)
  • Pumpkin, diced (500g)
  • Onion, chopped (1 medium)
  • Garlic, minced (2 cloves)
  • Fresh rosemary, chopped (2 tbsp)
  • Vegetable broth (1 liter)
  • White wine (1 cup)
  • Parmesan cheese, grated (1/2 cup)
  • Butter (2 tbsp)
  • Olive oil (2 tbsp)
  • Salt and pepper to taste

  • Large saucepan
  • Wooden spoon

To start, preheat the oven to 200°C. Toss the diced pumpkin with olive oil, salt, and pepper on a roasting pan and roast for 30-40 minutes until caramelized and tender. In a large saucepan, heat the remaining olive oil and sauté the chopped onion and minced garlic until translucent. Add the Arborio rice and cook for a few minutes until slightly toasted.

Next, deglaze the pan with white wine and let it simmer until absorbed. Begin adding the vegetable broth, one ladle at a time, stirring constantly until the rice is creamy and cooked al dente. This process should take about 18-20 minutes. Stir in the roasted pumpkin, chopped rosemary, butter, and grated Parmesan cheese until well combined. Season with salt and pepper to taste.

The total weight of the cooked dish is approximately 1500g, with 6 servings. Each serving weighs around 250g and has an estimated calorie count of 350.
