Exotic Butternut Squash and Black Bean Delight

Today, I’m excited to share a unique and flavorful dish that I recently created. This recipe was inspired by the changing seasons and my love for experimenting in the kitchen. I hope you enjoy trying out this recipe as much as I enjoyed creating it!

To make this dish, you will need the following ingredients:

  • butternut squash (diced) – 500g
  • black beans (canned) – 400g
  • quinoa – 200g
  • coconut milk – 400ml
  • curry powder – 1 tbsp
  • turmeric – 1 tsp
  • fresh cilantro (chopped) – 50g

For this recipe, you will need the following kitchen tools:

  • large pot
  • wooden spoon
  • chef’s knife
  • cutting board
  • measuring cups

Start by heating a large pot over medium heat. Add the diced butternut squash and sauté until slightly browned. Next, add in the black beans, quinoa, coconut milk, curry powder, and turmeric. Stir everything together and bring to a simmer. Cover the pot and let it cook for about 20 minutes, or until the quinoa is cooked through.

Once the dish is cooked, remove it from the heat and stir in the chopped cilantro. Serve hot and enjoy the delicious flavors and textures of this unique and comforting dish.

The total weight of the cooked dish is approximately 1200g, with 4 servings. Each serving weighs around 300g, with an estimated calorie count of 350 per serving.

One clever tip for this recipe is to toast the quinoa in a dry pan before adding it to the pot. This will enhance its nutty flavor and add an extra layer of depth to the dish.
