Flavorful Lamb & Sweet Potato Skillet Recipe

Hey there, foodies! Today, I’m excited to share a new recipe that I whipped up in the kitchen. This dish is perfect for a cozy night in with your loved ones or simply when you’re craving something warm and comforting. Let’s dive into this delicious creation!

Ingredients:

  • whisk

For this unique dish, you will need:
– 300g boneless lamb shoulder, diced
– 1 large sweet potato, peeled and cubed
– 1 red bell pepper, sliced
– 1 can chickpeas, drained and rinsed
– 1 tbsp harissa paste
– 2 cloves of garlic, minced
– 1 tsp ground cumin
– 1 tsp smoked paprika
– Salt and pepper to taste
– Fresh cilantro, chopped (for garnish)
– Olive oil for cooking

Preparation:

Start by heating a splash of olive oil in a large skillet over medium-high heat. Add the diced lamb shoulder and cook until browned on all sides. Remove the lamb from the skillet and set it aside.

In the same skillet, add a bit more olive oil if needed and sauté the sweet potato cubes until they start to soften. Add in the sliced red bell pepper, minced garlic, harissa paste, ground cumin, smoked paprika, salt, and pepper. Cook for a few minutes until the vegetables are tender.

Return the cooked lamb to the skillet and add the drained chickpeas. Stir everything together and let the flavors meld for a few more minutes.

Serving:

Once everything is cooked through and well combined, garnish the dish with freshly chopped cilantro. Serve hot and enjoy this unique and flavorful lamb and sweet potato skillet!
