Hello foodies! Today, I am excited to share a new recipe that perfectly captures the essence of a cozy autumn evening. This dish is warm, comforting, and bursting with seasonal flavors that will transport you to a picturesque fall day. I hope you enjoy creating and savoring this dish as much as I do.

Ingredients:

  • chicken thighs (500g)
  • butternut squash (500g)
  • onion
  • garlic cloves
  • maple syrup
  • cinnamon
  • nutmeg
  • salt and pepper
  • fresh rosemary
  • olive oil

  • knife
  • cutting board
  • oven
  • skillet

Preparation:

To begin, preheat your oven to 400°F (200°C). Peel and dice the butternut squash into small cubes. Chop the onion and mince the garlic cloves.

Place the diced butternut squash on a baking sheet and drizzle with olive oil, maple syrup, cinnamon, nutmeg, salt, and pepper. Toss everything together until the squash is evenly coated. Place in the oven and roast for about 20-25 minutes, or until tender and caramelized.

While the butternut squash is roasting, season the chicken thighs with salt, pepper, and chopped rosemary. In a skillet over medium heat, sear the chicken thighs until golden brown on both sides, about 5-6 minutes per side. Remove the chicken from the skillet and set aside.

In the same skillet, add a bit more olive oil if needed, and sauté the onion and garlic until fragrant. Add the seared chicken thighs back to the skillet.

Once the butternut squash is done roasting, add it to the skillet with the chicken. Mix everything together and let it simmer for a few minutes to allow the flavors to meld together.

Serve the chicken and butternut squash hot, garnished with fresh rosemary. Enjoy this delightful autumn dish with your loved ones!

For an extra burst of flavor, try adding a splash of balsamic vinegar to the skillet right before serving. The tangy sweetness will take this dish to the next level!
