Delicious Sweet Potato & Black Bean Tacos

Today’s Inspired Dish: Sweet Potato & Black Bean Tacos

As the fall season begins to settle in, I find myself craving warm and comforting meals that are both hearty and flavorful. One of my favorite dishes to make during this time of year is my unique twist on tacos using sweet potatoes and black beans. This dish is not only packed with nutrients, but it’s also incredibly delicious and satisfying. Today, I’m excited to share this recipe with you!

Ingredients:

  • 2 medium sweet potatoes, diced
  • 1 can of black beans, drained and rinsed
  • 1 cup of corn kernels
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 2 tablespoons of olive oil
  • 2 tablespoons of taco seasoning
  • Juice of 1 lime
  • Salt and pepper to taste
  • 8 small tortillas
  • Fresh cilantro, chopped (for garnish)

To start, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a mixing bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, taco seasoning, salt, and pepper. Spread the sweet potatoes out on the baking sheet in an even layer and roast in the oven for 20-25 minutes or until they are tender and slightly crispy.

While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the diced red onion, bell pepper, and corn kernels, and sauté until the vegetables are tender. Stir in the black beans and lime juice, and cook for an additional 2-3 minutes until everything is heated through.

To assemble the tacos, warm the tortillas in a dry skillet or microwave for a few seconds. Fill each tortilla with a scoop of the roasted sweet potatoes and black bean mixture. Top with fresh cilantro and a squeeze of lime juice.

This dish serves approximately 4 people, with each serving weighing around 300 grams. One serving of these sweet potato and black bean tacos is approximately 350 calories.

One clever tip for this recipe is to sprinkle a bit of crumbled feta cheese on top of the tacos for a creamy and tangy finish. The saltiness of the feta pairs perfectly with the sweetness of the roasted sweet potatoes and the earthiness of the black beans.
