Unique Thai Pineapple Fried Rice Recipe

Thai-inspired Pineapple Fried Rice

Today, I’m excited to share a unique dish that combines the sweetness of pineapple with the savory flavors of Thai cuisine. This recipe is perfect for a weeknight meal that will transport you to the streets of Bangkok with every bite.

Ingredients:

  • 300g cooked jasmine rice
  • 200g fresh pineapple, diced
  • 150g shrimp, peeled and deveined
  • 1 small bell pepper, diced
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 eggs, beaten
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp curry powder
  • 2 tbsp vegetable oil
  • 2 stalks of green onions, chopped
  • 50g cashews, toasted

Kitchen Tools:

  • wok
  • knife
  • cutting board
  • spatula
  • bowl

To start, heat the vegetable oil in a wok over medium-high heat. Add the garlic and onion, and sauté until fragrant. Then, add the shrimp and cook until pink and cooked through. Push the shrimp to one side of the wok and pour the beaten eggs on the other side. Scramble the eggs until just set, then mix with the shrimp.

Next, add the diced bell pepper and fresh pineapple to the wok. Stir-fry for a few minutes until the vegetables are slightly softened. Add the cooked jasmine rice to the wok, breaking up any clumps with your spatula.

Season the fried rice with soy sauce, fish sauce, and curry powder. Stir well to ensure the rice is evenly coated with the seasonings. Continue to cook for another 2-3 minutes to allow the flavors to meld together.

Finally, remove the wok from the heat and stir in the chopped green onions and toasted cashews. Serve the Thai-inspired pineapple fried rice hot, garnished with extra green onions and cashews if desired.

This dish serves 4 and each serving weighs approximately 300g. One serving of this flavorful pineapple fried rice is around 400 calories.

One clever tip for this recipe is to use day-old rice for better texture. The slightly dried-out rice will absorb the flavors more effectively, resulting in a perfect fried rice dish.
