  • 500g of shrimp, peeled and deveined
  • 1 large ripe mango, diced
  • 1 red bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves of garlic, minced
  • 2 red chilies, thinly sliced
  • 3 tbsp of soy sauce
  • 2 tbsp of sriracha sauce
  • 1-inch piece of ginger, grated
  • Cooked rice for serving
  • 2 tbsp of oil for cooking

To begin, heat oil in a wok over medium-high heat. Add the minced garlic, sliced onion, and red bell pepper. Stir-fry for 2-3 minutes until the vegetables are slightly softened.

Next, add in the shrimp and cook until they turn pink and opaque, about 2-3 minutes. Then, add in the diced mango, grated ginger, and sliced red chilies. Stir in the soy sauce and sriracha sauce, ensuring everything is well combined.

Cook for an additional 2-3 minutes, allowing the flavors to meld together. The dish should be fragrant and colorful at this point. Taste and adjust the seasoning if needed.
