Ingredients:

  • 1 medium butternut squash (about 900g)
  • 1 cup quinoa (185g), cooked
  • 1/2 cup dried cranberries (75g)
  • 1/2 cup chopped pecans (60g)
  • 1/2 cup crumbled feta cheese (75g)
  • 2 tbsp maple syrup (30ml)
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 tsp black pepper

To start, preheat your oven to 400°F (200°C). Cut the butternut squash in half lengthwise and scoop out the seeds and fibers. Place the squash halves, cut side down, on a baking sheet and roast in the oven for about 30-40 minutes, or until the flesh is tender.

While the squash is roasting, prepare the filling. In a mixing bowl, combine the cooked quinoa, dried cranberries, chopped pecans, crumbled feta cheese, maple syrup, ground cinnamon, salt, and black pepper. Mix well until all the ingredients are evenly combined.

Once the squash is cooked, remove it from the oven and carefully flip the halves over. Fill each squash half with the quinoa mixture, pressing it down gently to pack it in. Return the stuffed squash to the oven and bake for an additional 10-15 minutes, or until the filling is heated through.

Serve the stuffed butternut squash warm, garnished with an extra sprinkle of cinnamon and a drizzle of maple syrup. This dish pairs perfectly with a side salad or roasted vegetables for a complete and satisfying meal.
