Ingredients:

  • 1 small sugar pumpkin (800g)
  • 400ml coconut milk
  • 1 tbsp curry powder
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 500ml vegetable broth
  • 1-inch piece of fresh ginger, grated
  • 1 lime, juiced
  • 2 tbsp coconut oil
  • Salt and pepper to taste

To start, preheat your oven to 400°F (200°C). Begin by cutting the pumpkin in half and scooping out the seeds. Peel the pumpkin and chop it into chunks. Place the pumpkin chunks on a baking sheet, drizzle with a bit of coconut oil, and roast in the oven for about 30-40 minutes, or until tender.

In a large pot, heat the remaining coconut oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onions are translucent and fragrant. Stir in the curry powder and cook for another minute.

Once the pumpkin is roasted, add it to the pot along with the vegetable broth and coconut milk. Bring the mixture to a simmer and let it cook for about 15-20 minutes to allow the flavors to meld together.

Using an immersion blender, blend the soup until smooth and creamy. If you prefer a chunkier texture, you can leave some pieces of pumpkin intact. Season the soup with salt, pepper, and lime juice to taste.
