Kiwi Chicken Curry Recipe

For this dish, you’ll need the following ingredients:

  • boneless chicken thighs (500g)
  • kiwifruit (2)
  • coconut milk (200ml)
  • capers (50g)
  • red curry paste (2 tbsp)
  • quinoa (150g)
  • broccoli (1 head)

To prepare this dish, you’ll need the following kitchen tools:

  • chef’s knife
  • cutting board
  • skillet
  • spatula

Start by slicing the chicken thighs into bite-sized pieces and marinating them in the red curry paste. While the chicken marinates, peel and dice the kiwifruit. In a skillet, heat some coconut milk over medium heat and add in the marinated chicken. Cook until the chicken is almost fully cooked, then add in the diced kiwifruit and capers.

In a separate saucepan, cook the quinoa according to package instructions. As the quinoa cooks, steam the broccoli until tender. Once the chicken is fully cooked and the kiwifruit has softened, serve the curry over a bed of quinoa with a side of steamed broccoli.
