Today’s Special: Spicy Coconut Curry with Tangy Pineapple

As the weather starts to cool down, warm and comforting dishes are on my mind. Today, I’m excited to share with you my newest creation: Spicy Coconut Curry with Tangy Pineapple. This dish is a perfect blend of spicy, creamy, and tangy flavors that will leave your taste buds dancing.

Ingredients:

  • 500g chicken breast (diced)
  • 400ml coconut milk
  • 200g pineapple chunks (fresh or canned)
  • 50g red curry paste
  • 1 red bell pepper (sliced)
  • 1 onion (chopped)
  • 3 cloves of garlic (minced)
  • 1 tbsp ginger (grated)
  • Handful of fresh cilantro
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

To start, heat vegetable oil in a large skillet over medium heat. Add the chopped onion, minced garlic, and grated ginger, sautéing until fragrant. Next, add the diced chicken breast to the skillet, cooking until browned on all sides. Season with salt and pepper.

Once the chicken is cooked through, stir in the red curry paste, coating the chicken evenly. Pour in the coconut milk and bring the mixture to a gentle simmer. Let it simmer for about 10 minutes to allow the flavors to meld together.

After simmering, add the sliced bell pepper and pineapple chunks to the skillet. Stir well to combine, allowing the vegetables to cook until slightly tender but still crunchy.

Finally, garnish the curry with fresh cilantro leaves for a pop of freshness and aromatic flavor. Serve the Spicy Coconut Curry with Tangy Pineapple over steamed rice or noodles for a complete and satisfying meal.

Tip:

For an extra kick of heat, you can add a chopped chili pepper or a dash of hot sauce to the curry. Adjust the spiciness according to your preference!
