The Harvest Bowl

Today, I’m excited to share with you my latest creation: The Harvest Bowl. This dish is perfect for autumn, with a colorful array of seasonal vegetables and a delightful mix of flavors. Whether you’re looking for a hearty lunch or a light dinner, this recipe is sure to satisfy your cravings for something wholesome and delicious.

Ingredients:

  • butternut squash (200g)
  • brussels sprouts (150g)
  • sweet potatoes (250g)
  • quinoa (100g)
  • dried cranberries (50g)
  • pumpkin seeds (30g)
  • balsamic vinegar (30ml)
  • olive oil (30ml)
  • salt (to taste)
  • black pepper (to taste)

Kitchen Tools:

  • baking sheet
  • knife
  • cutting board
  • saucepan
  • mixing bowl

Start by preheating your oven to 400°F (200°C). Peel and dice the butternut squash and sweet potatoes into bite-sized pieces. Trim the brussels sprouts and cut them in half. Place all the vegetables on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 25-30 minutes or until tender and slightly caramelized.

While the vegetables are roasting, cook the quinoa according to the package instructions in a saucepan. Once cooked, fluff with a fork and set aside.

In a small mixing bowl, whisk together the balsamic vinegar and olive oil to create a dressing.

Once the vegetables are done roasting, assemble your harvest bowl. Start with a base of quinoa, top with the roasted vegetables, dried cranberries, and pumpkin seeds. Drizzle the balsamic dressing over the top and give everything a gentle toss to combine.

Serving:

The approximate total weight of the cooked dish is 680g, with 4 servings. Each serving weighs around 170g, with an approximate calorie count of 300 per serving.

One unique tip for this dish is to sprinkle freshly chopped sage over the top before serving. The earthy, herbaceous flavor of the sage adds an extra dimension to the dish that will truly elevate the taste experience.
