Moroccan-inspired Roasted Vegetable Tagine

Today, I’m excited to share a recipe for a hearty and flavorful Moroccan-inspired roasted vegetable tagine. This dish is perfect for cozy nights in or for impressing guests with its vibrant colors and exotic flavors.

Ingredients:

  • 1 small butternut squash, diced
  • 1 small eggplant, cubed
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 onion, thinly sliced
  • 3 cloves of garlic, minced
  • 1 can of chickpeas, drained
  • 1 cup of couscous
  • 2 cups of vegetable broth
  • 1 tsp of cumin
  • 1 tsp of coriander
  • 1 tsp of smoked paprika
  • 1 lemon, juiced
  • 3 tbsp of olive oil
  • Salt and pepper to taste

Start by preheating your oven to 400°F (200°C). In a large mixing bowl, toss the diced butternut squash, eggplant, red bell pepper, zucchini, onion, and minced garlic with olive oil, cumin, coriander, smoked paprika, salt, and pepper. Spread the vegetables out on a baking sheet and roast in the oven for 30-35 minutes until they are tender and slightly caramelized.

While the vegetables are roasting, prepare the couscous according to the package instructions using vegetable broth instead of water for added flavor. Fluff the couscous with a fork and set aside.

In a saucepan, heat a drizzle of olive oil over medium heat. Add the drained chickpeas and cook for 5-7 minutes until they are slightly crispy. Season with salt and pepper.

Once the vegetables are roasted, combine them with the chickpeas in a large serving dish. Squeeze fresh lemon juice over the mixture and toss to combine.

Serve the roasted vegetable tagine over a bed of fluffy couscous. This dish is best enjoyed hot, garnished with fresh cilantro or parsley for a burst of freshness.
