Ingredients:

  • Saffron threads (a pinch)
  • Whole milk (1 liter)
  • Sugar (100g)
  • Vanilla extract (1 tsp)
  • Ground cinnamon (1/2 tsp)
  • Slivered almonds (50g)
  • Raisins (50g)

  • Wooden spoon
  • Measuring cups
  • Measuring spoons
  • Grater

To begin, combine the milk and saffron threads in a medium saucepan over medium heat. Let the milk simmer gently for about 10 minutes to infuse the saffron flavor. Stir occasionally to ensure the saffron is evenly distributed.

Next, add the Arborio rice to the saffron-infused milk and stir well. Cook the rice mixture over low heat, stirring occasionally, until the rice is tender and the mixture has thickened to a creamy consistency. This will take about 30-40 minutes.

Once the rice is cooked, stir in the sugar, vanilla extract, and ground cinnamon. Adjust the sweetness to your liking by adding more sugar if desired. Remove the saucepan from the heat and let the rice pudding cool slightly.

While the rice pudding is cooling, toast the slivered almonds in a dry pan over medium heat until they are golden and fragrant. Set aside. Then, plump the raisins by soaking them in warm water for 10 minutes, draining, and patting them dry with a paper towel.

To serve, spoon the saffron-infused rice pudding into individual bowls and top each portion with a sprinkle of toasted almonds and plumped raisins. The rich, creamy texture of the pudding combined with the warm, aromatic flavors of saffron, cinnamon, and vanilla is sure to delight your taste buds.
