Thai-Inspired Coconut Curry Soup

Hey everyone! Today, I’m excited to share a unique and flavorful recipe for Thai-inspired coconut curry soup. This dish is perfect for a cozy night in or for impressing guests with a delicious and exotic meal.

Ingredients:

  • 1 can of coconut milk (400g)
  • 2 cups of vegetable broth (480ml)
  • 3 tablespoons of red curry paste
  • 200g of firm tofu, diced
  • 150g of mushrooms, sliced
  • 1 red bell pepper, diced
  • 1 stalk of lemongrass, bruised
  • 2 kaffir lime leaves
  • 1 tablespoon of fish sauce
  • Juice of 1 lime
  • 1 teaspoon of sugar
  • 1-2 Thai chili peppers, sliced
  • Fresh cilantro for garnish

Kitchen Tools:

  • knife
  • cutting board

To start, heat the coconut milk and vegetable broth in a saucepan over medium heat. Add the red curry paste and stir until it is well incorporated. Add the diced tofu, sliced mushrooms, and diced bell pepper to the pot.

Bruise the lemongrass stalk by gently pressing on it with the back of a knife to release its flavor. Add the lemongrass, kaffir lime leaves, fish sauce, lime juice, sugar, and sliced Thai chili peppers to the soup. Let the soup simmer for about 15-20 minutes until the vegetables are tender and the flavors have melded together.

Before serving, remove the lemongrass stalk and kaffir lime leaves from the pot. Ladle the soup into bowls and garnish with fresh cilantro.

This Thai-inspired coconut curry soup yields approximately 4 servings with each serving weighing around 400g. One serving has an estimated calorie count of 250 calories.
