Today’s Delicious Creation: Spicy Mango Coconut Chicken Curry

Greetings, foodies! Today, I am excited to share with you my latest culinary creation — a Spicy Mango Coconut Chicken Curry. This dish is inspired by the vibrant flavors of South Asia and will surely tantalize your taste buds with its unique combination of ingredients. So, let’s dive in and explore this exotic and flavorful recipe together!

Ingredients:

  • boneless chicken thighs (500g)
  • mango (1, peeled and diced)
  • coconut milk (400ml)
  • onion (1, finely chopped)
  • garlic cloves (3, minced)
  • fresh ginger (1-inch piece, grated)
  • green chili (1, finely chopped)
  • curry powder (2 tbsp)
  • ground turmeric (1 tsp)
  • ground cumin (1 tsp)
  • ground coriander (1 tsp)
  • salt (to taste)
  • black pepper (to taste)
  • olive oil (2 tbsp)
  • fresh cilantro (for garnish)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon
  • measuring spoons

To start, heat olive oil in a large skillet over medium heat. Add the chopped onion, minced garlic, grated ginger, and green chili. Sauté until the onions are soft and translucent, about 5 minutes. Next, add the chicken thighs, curry powder, turmeric, cumin, coriander, salt, and pepper. Cook until the chicken is browned on all sides.

Once the chicken is cooked through, add the diced mango and coconut milk to the skillet. Stir well to combine all the ingredients. Let the curry simmer for about 10-15 minutes until the sauce thickens slightly and the flavors meld together.

Serve the Spicy Mango Coconut Chicken Curry hot over steamed rice or with warm naan bread. Garnish with fresh cilantro for an extra burst of flavor.

Approximate total weight of the cooked dish: 1200g
Approximate number of servings: 4
Average weight of one serving: 300g
Approximate calorie count per serving: 400 calories

One clever tip for enhancing the flavor of this curry is to add a splash of lime juice just before serving. The acidity of the lime will brighten up the dish and add a refreshing twist to the rich flavors.

I hope you enjoy making and savoring this Spicy Mango Coconut Chicken Curry as much as I did. Feel free to customize the recipe with your favorite ingredients and spices to make it your own. Happy cooking!
