  • fresh shrimp (400g, peeled and deveined)
  • ripe mango (1 large, cubed)
  • coconut milk (1 can)
  • red chili (1, sliced)
  • red bell pepper (1, sliced)
  • garlic cloves (3, minced)
  • fresh ginger (1 tbsp, grated)
  • soy sauce (2 tbsp)
  • fresh lime juice (2 tbsp)
  • coconut sugar (1 tbsp)
  • fresh basil leaves (a handful)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • wooden spoon
  • grater

To start, heat your wok over medium-high heat and add a splash of oil. Toss in the minced garlic and grated ginger, stirring until fragrant. Next, add in the sliced red chili and bell pepper, cooking until just tender.

Now, push the veggies to the side of the wok and add the shrimp. Cook until they turn pink and opaque, then pour in the coconut milk, soy sauce, lime juice, and coconut sugar. Stir everything together and let simmer for a few minutes to allow the flavors to meld.

Once the sauce has thickened slightly, gently fold in the cubed mango and fresh basil leaves. Cook for another minute until the mango is heated through but still retains its shape.
