As the crisp fall air settles in, I find myself craving warm and comforting dishes that celebrate the flavors of the season. Today, I’m excited to share with you a unique recipe that combines the earthy sweetness of roasted beets with the subtle tang of goat cheese and the crunch of toasted walnuts. This dish is perfect for a cozy night in or a special gathering with loved ones.

Ingredients:

  • beets
  • goat cheese
  • walnuts
  • olive oil
  • balsamic vinegar
  • fresh thyme
  • salt and pepper

To start, preheat your oven to 400°F (200°C). Peel and dice the beets into small cubes, then place them on a baking sheet lined with aluminum foil.
