Today, I’m excited to share a cozy and comforting recipe for Thai-inspired coconut curry ramen. This dish is perfect for chilly evenings when you’re craving something rich and flavorful. The combination of spicy curry paste, creamy coconut milk, and savory ramen noodles creates a truly delicious and satisfying meal.

Ingredients:

  • ramen noodles (200g)
  • coconut milk (400ml)
  • red curry paste (2 tbsp)
  • vegetable broth (500ml)
  • tofu (200g, diced)
  • zucchini (1, sliced)
  • red bell pepper (1, sliced)
  • lime (1, juiced)
  • fresh cilantro (for garnish)

Kitchen Tools:

  • wooden spoon
  • knife
  • chopping board
  • ladle

To start, cook the ramen noodles according to the package instructions. In a large pot, heat the coconut milk over medium heat. Add the red curry paste and stir until fragrant. Pour in the vegetable broth and bring the mixture to a simmer.

Add the diced tofu, sliced zucchini, and red bell pepper to the pot. Let everything cook for about 10 minutes, until the vegetables are tender. Squeeze in the lime juice for a bright citrusy finish.

Divide the cooked ramen noodles into bowls and ladle the coconut curry broth over the top. Garnish with fresh cilantro for a burst of freshness.
