Today’s Delight: Smoked Salmon and Blueberry Salad

Lately, I have been craving a fresh and vibrant dish to welcome the arrival of spring. I decided to create something special using a unique combination of flavors and textures. The result? A delightful Smoked Salmon and Blueberry Salad that is not only visually stunning but also incredibly delicious. This dish strikes the perfect balance between smoky, salty, sweet, and tangy flavors that will leave you craving more.

Ingredients:

  • 150g smoked salmon
  • 100g blueberries
  • 150g mixed greens
  • 50g feta cheese
  • 1/2 small red onion
  • 50g walnuts
  • 1 lemon
  • 2 tbsp olive oil
  • 1 tbsp honey
  • to taste
  • to taste

I start by arranging a bed of mixed greens on a large serving platter. Next, I thinly slice the smoked salmon and place it on top of the greens. Then, I scatter fresh blueberries, crumbled feta cheese, and chopped walnuts over the salad.

In a small bowl, I whisk together the juice of one lemon, olive oil, honey, salt, and black pepper to create a tangy dressing. I drizzle this delicious dressing over the salad just before serving.

This vibrant Smoked Salmon and Blueberry Salad weighs approximately 500g once assembled and serves 2 people. Each serving is around 250g and contains approximately 300 calories.

One clever tip for this recipe is to lightly toast the walnuts in a dry frying pan before adding them to the salad. This step enhances the nutty flavor and adds a delightful crunch to the dish.
