As the weather starts to cool down, I find myself craving comforting dishes that warm the soul. That’s why I’m excited to share my recipe for a decadent Parmesan Truffle Risotto. This creamy and earthy dish is the perfect indulgence for a cozy night in or a special celebration.

Ingredients:

  • Arborio rice (300g)
  • Chicken broth (1 liter)
  • Parmesan cheese (100g, grated)
  • White truffle oil (2 tbsp)
  • Shallots (2, finely chopped)
  • Garlic (2 cloves, minced)
  • Butter (50g)
  • Salt (to taste)
  • Black pepper (to taste)

  • Saucepan
  • Wooden spoon
  • Grater
  • Chef’s knife
  • Cutting board

To start, heat the chicken broth in a saucepan over low heat. In another saucepan, melt the butter and sauté the shallots and garlic until they are soft and translucent. Add the Arborio rice to the saucepan and toast it for a few minutes until it is slightly translucent.

Gradually ladle the warm chicken broth into the rice mixture, stirring continuously until the liquid is absorbed before adding more. Continue this process until the rice is creamy and cooked to al dente, about 20 minutes.

Once the risotto reaches the desired consistency, stir in the grated Parmesan cheese and white truffle oil. Season with salt and pepper to taste, adjusting the flavors as needed. Serve the risotto hot, garnished with extra Parmesan cheese and a drizzle of truffle oil.
