Ingredients:

  • bone-in pork chops
  • fresh raspberries
  • balsamic vinegar
  • honey
  • garlic
  • salt and pepper

  • wooden spoon

To start, season the pork chops with salt and pepper on both sides. Heat a cast iron skillet over medium-high heat and sear the pork chops for about 3-4 minutes on each side until they are golden brown and cooked through. Use a meat thermometer to ensure they reach an internal temperature of 145°F (63°C). Once cooked, remove the pork chops from the skillet and set aside.

In the same skillet, add the minced garlic and sauté for a minute until fragrant. Then, add the raspberries, balsamic vinegar, and honey. Using a wooden spoon, gently mash the raspberries to release their juices and stir everything together. Let the mixture simmer for about 5-7 minutes until it thickens into a glaze.

Return the seared pork chops to the skillet, coating them with the raspberry balsamic glaze. Allow the pork chops to simmer in the glaze for another 2-3 minutes, ensuring they are fully coated and heated through.

Once the pork chops are coated and the glaze has thickened, remove them from the skillet and serve hot. The raspberry balsamic glaze will add a beautiful color and flavor to the dish, making it a perfect fall meal.
