Introduction

Today, I am excited to share with you a unique dish that combines flavors from around the world. This recipe was inspired by a recent trip to a spice market, where I found the most aromatic blend of spices that immediately sparked my creativity in the kitchen. The result is a dish that is bold, flavorful, and sure to impress your taste buds.

Ingredients

  • 400g boneless chicken thighs
  • 200ml coconut milk
  • 150g canned pineapple chunks
  • 10g curry powder
  • 5g garam masala
  • 1, diced green bell pepper
  • 1, chopped onion
  • 2 garlic cloves, minced
  • 1 tbsp minced ginger
  • to taste salt and pepper
  • for serving, cooked rice

Preparation

Start by seasoning the chicken thighs with curry powder, garam masala, salt, and pepper. Heat a skillet over medium heat and brown the chicken thighs on both sides. Remove from the skillet and set aside.

In the same skillet, sauté the onion, garlic, and ginger until fragrant. Add the diced green bell pepper and canned pineapple chunks. Cook until the vegetables are tender.

Return the chicken thighs to the skillet and pour in the coconut milk. Simmer for 15-20 minutes until the chicken is cooked through and the sauce has thickened.

Serve the chicken curry over cooked rice and enjoy the explosion of flavors in every bite.

Tips

For an extra burst of freshness, squeeze some lime juice over the finished dish before serving. The acidity will complement the richness of the coconut milk and spices beautifully.
