Ingredients:

  • 4 large bell peppers
  • 1 cup of quinoa
  • 1 can of black beans (400g)
  • 1 cup of corn kernels
  • 2 medium tomatoes, diced
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 1 tbsp of chili powder, 1 tsp of cumin, salt, and pepper to taste
  • 1 cup of shredded cheese (cheddar or mozzarella)
  • 2 tbsp of olive oil

To start, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers, remove the seeds, and set them aside in a baking dish. In a large pot, cook the quinoa according to package instructions.

In a skillet, heat olive oil over medium heat. Add chopped onion, minced garlic, and sauté until fragrant. Then, add black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper. Cook for about 5 minutes until the mixture is well combined.

Next, add the cooked quinoa to the skillet and mix everything together. Stuff each bell pepper with the quinoa mixture, pressing down gently to fill them to the top. Sprinkle shredded cheese on top of each pepper.

Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes until the peppers are tender and the cheese is melted and bubbly.

Once cooked, remove the dish from the oven and let it cool for a few minutes before serving. The aroma of the spices and roasted bell peppers will fill your kitchen, creating a warm and inviting atmosphere.
