To create this delicious galette, you will need the following ingredients:

  • 150g cold butter, cubed
  • 100ml ice water
  • 3 medium-sized beetroot, peeled and thinly sliced
  • 2 tbsp fresh rosemary, finely chopped
  • 100g goat cheese
  • 2 tbsp honey
  • 2 tbsp olive oil
  • to taste

Before you begin, gather your kitchen tools:

  • baking sheet

Start by preheating your oven to 200°C (400°F). In a mixing bowl, combine the flour and cold, cubed butter. Use your fingers to rub the butter into the flour until the mixture resembles breadcrumbs. Slowly add the ice water and mix until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.

Meanwhile, in a separate bowl, toss the sliced beetroot with olive oil, salt, pepper, and half of the chopped rosemary. Set aside. Roll out the chilled dough on a floured surface into a circle about 12 inches in diameter. Transfer the dough to a baking sheet lined with parchment paper.

Spread the goat cheese over the dough, leaving a border of about 2 inches. Arrange the seasoned beetroot slices on top of the goat cheese. Fold the edges of the dough over the filling, pleating as you go. Brush the edges of the galette with olive oil and sprinkle the remaining rosemary on top.

Bake the galette in the preheated oven for 30-35 minutes or until the crust is golden brown. Drizzle the honey over the warm galette before serving.

This Savory Rosemary and Beetroot Galette weighs approximately 800g once cooked. It serves 4 people, with each serving weighing around 200g. An estimation for the calorie count per serving is 300 calories.
