  • arborio rice (300g)
  • pumpkin, diced (400g)
  • onion, finely chopped (1 medium)
  • garlic, minced (2 cloves)
  • coconut milk (400ml)
  • vegetable stock (1 liter)
  • curry powder (2 tbsp)
  • fresh cilantro, chopped (for garnish)

To start, heat a saucepan over medium heat and add a splash of olive oil. Sauté the chopped onion and minced garlic until fragrant. Add the diced pumpkin and curry powder, stirring well to coat the vegetables in the aromatic spices.

Next, add the arborio rice to the pan and stir to toast the grains slightly. Slowly begin adding the vegetable stock, one ladle at a time, stirring continuously until the liquid is absorbed before adding more. This gradual process will help the rice release its starches and create a creamy texture.

Once the rice is almost cooked through, stir in the coconut milk to add richness and creaminess to the risotto. Continue to cook until the rice is al dente and the pumpkin is tender. Taste and adjust seasoning as needed with salt and pepper.
