Today’s Special: Honey Glazed Chicken and Pineapple Stir-Fry

Welcome to my kitchen! Today, I’m excited to share a recipe that brings back memories of warm summer nights with friends gathered around the table. This honey glazed chicken and pineapple stir-fry is a perfect blend of sweet and savory flavors that will surely delight your taste buds.

Ingredients:

  • 300g chicken breast, diced
  • 200g fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 tbsp honey
  • 3 tbsp soy sauce
  • 1-inch piece of ginger, grated
  • 1 tbsp cornstarch
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • to taste

  • 2 tbsp vegetable oil

Kitchen Tools:

  • wok
  • knife
  • cutting board
  • whisk
  • measuring spoons

To start, heat vegetable oil in a wok over medium-high heat. Add the diced chicken breast and cook until browned on all sides, about 5 minutes. Remove the chicken from the wok and set aside.

In the same wok, add a bit more oil if needed and sauté the chopped onion, sliced bell pepper, minced garlic, and grated ginger until fragrant, about 3 minutes. Return the cooked chicken to the wok along with the fresh pineapple chunks.

In a small bowl, whisk together honey, soy sauce, cornstarch, rice vinegar, sesame oil, salt, and pepper. Pour this sauce over the chicken and pineapple mixture in the wok. Stir well to combine and let simmer for another 5 minutes until the sauce thickens and coats the ingredients.

Once the chicken is cooked through and the sauce has thickened, remove from heat. Serve the honey glazed chicken and pineapple stir-fry hot over steamed rice or noodles. Enjoy the perfect balance of sweet and savory flavors in every bite!
