  • 150g sugar
  • 3 eggs
  • 200g sour cream
  • 2 tbsp dried lavender
  • 150g blueberries
  • 50g butter
  • 1 tsp vanilla extract
  • 200g digestive biscuits

To begin, preheat your oven to 160°C (320°F). In a food processor, pulse the digestive biscuits until they form fine crumbs. Melt the butter and mix it with the biscuit crumbs until well combined. Press this mixture into the bottom of a lined springform pan to form the cheesecake base.

In a mixing bowl, beat the cream cheese and sugar together until smooth. Add in the eggs one at a time, mixing well after each addition. Stir in the sour cream, vanilla extract, and dried lavender. Gently fold in the blueberries, being careful not to crush them.

Pour the cheesecake mixture over the biscuit base in the springform pan. Smooth the top with a spatula and bake in the preheated oven for 45-50 minutes, or until the edges are set but the center still jiggles slightly.

Once the cheesecake is cooked, turn off the oven and let it cool inside with the door slightly ajar for 1 hour. This will prevent cracking. Refrigerate the cheesecake for at least 4 hours or overnight to set completely.
