Spicy Pumpkin Soup Delight

Today’s Creation: Spicy Pumpkin Soup with Coconut Shrimp

As the weather starts to cool down, I find myself craving warming soups to cozy up with. Today, I’m sharing my latest creation: a spicy pumpkin soup with a twist of coconut shrimp. The combination of rich pumpkin flavors with a kick of spice and the sweetness of coconut-infused shrimp is simply divine.

Ingredients:

  • 1 small pumpkin (about 800g), peeled and diced
  • 400ml coconut milk
  • 300g shrimp, peeled and deveined
  • 1 red chili, thinly sliced
  • 1 thumb-sized piece of ginger, minced
  • 2 cloves of garlic, minced
  • 1 liter vegetable broth
  • 1 lime, juiced
  • Fresh coriander, chopped
  • Salt and pepper to taste

To start, heat a bit of oil in a large pot over medium heat. Add the chili, ginger, and garlic, sautéing until fragrant. Toss in the diced pumpkin and cook for a few minutes until slightly softened. Pour in the vegetable broth and coconut milk, then bring to a boil. Reduce the heat and let simmer until the pumpkin is tender.

While the soup is cooking, heat a skillet over medium-high heat. Season the shrimp with salt, pepper, and a squeeze of lime juice. Cook the shrimp until pink and cooked through, then set aside.

Once the pumpkin is soft, use an immersion blender to purée the soup until smooth. Season with salt and pepper to taste. To serve, ladle the soup into bowls and top with the coconut shrimp. Garnish with fresh coriander and a squeeze of lime juice.

This spicy pumpkin soup with coconut shrimp is a total of about 1800g once cooked. It serves 4 hungry souls, with each serving weighing approximately 450g. The estimated calorie count per serving is around 350 calories.

One unique tip for this recipe is to add a splash of coconut milk to the shrimp while cooking to intensify the coconut flavor.
