Ingredients:

  • 300g shrimp, peeled and deveined
  • 1 ripe mango, diced
  • 200ml coconut milk
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 red chili, thinly sliced
  • 2 tbsp soy sauce
  • 1 lime, juiced
  • Fresh cilantro, for garnish
  • 2 tbsp cooking oil
  • Salt and pepper to taste

To start, heat a wok over medium-high heat and add cooking oil. Once hot, add minced garlic, grated ginger, and sliced chili. Sauté for a minute until fragrant. Add sliced onion and red bell pepper, and cook until they start to soften.

Next, add the shrimp to the wok and cook until they turn pink and opaque. Pour in coconut milk, soy sauce, and lime juice, stirring to combine. Let the mixture simmer for a few minutes to allow the flavors to meld together.

Gently stir in the diced mango and season with salt and pepper to taste. Cook for an additional 2-3 minutes until the mango is heated through but still slightly firm. Garnish with fresh cilantro before serving.
