Unique Goat Cheese Eggplant Potato Dish

Introduction:

Hey there, foodies! Today, I am excited to share a unique and delicious recipe that I recently whipped up in my kitchen. This dish is perfect for a cozy night in or a special occasion when you want to impress your guests with something truly out of the ordinary.

Ingredients:

  • Japanese eggplant
  • purple potatoes
  • goat cheese
  • walnuts
  • lemon
  • garlic
  • olive oil
  • salt and pepper

  • grater

Preparation:

I start by preheating my oven to 400°F (200°C). Then, I slice the Japanese eggplant and purple potatoes into thin rounds using my chef’s knife. I lay them out on a baking sheet, drizzle with olive oil, and season with salt and pepper before popping them in the oven to roast for about 20 minutes, or until they are tender and slightly browned.

While the veggies are roasting, I prepare the walnut and goat cheese topping. I chop the walnuts and garlic finely, then mix them with crumbled goat cheese in a bowl. I also zest the lemon into the mix for a pop of citrusy flavor.

Once the eggplant and potatoes are done roasting, I take them out of the oven and let them cool slightly. Then, I top each round with a spoonful of the goat cheese mixture. I return the baking sheet to the oven for another 5 minutes to allow the cheese to melt slightly.

Finally, I plate up the dish, garnishing with a sprinkle of fresh herbs or a drizzle of honey if desired. The combination of creamy goat cheese, crunchy walnuts, and roasted veggies is simply divine!
