Hey there! Today, I’m sharing a cozy and comforting recipe for Green Curry Noodle Soup. This dish is perfect for a chilly evening or when you’re craving something warm and flavorful. Let’s dive in!

Ingredients:

  • green curry paste (50g)
  • coconut milk (400ml)
  • chicken broth (600ml)
  • rice noodles (200g)
  • chicken breast (300g, thinly sliced)
  • bamboo shoots (100g, sliced)
  • bell pepper (1, thinly sliced)
  • zucchini (1, thinly sliced)
  • fish sauce (2 tbsp)
  • lime juice (2 tbsp)
  • sugar (1 tbsp)
  • fresh basil (for garnish)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large pot
  • wooden spoon

I start by heating some green curry paste in a large pot until fragrant. Then, I pour in the coconut milk and chicken broth, bringing it to a simmer. Next, I add in the rice noodles, chicken breast, bamboo shoots, bell pepper, and zucchini. I let everything cook until the chicken is done and the veggies are tender.

To finish the soup, I season it with fish sauce, lime juice, and sugar for the perfect balance of salty, sour, and sweet flavors. I serve it hot, garnished with fresh basil for a burst of herbaceous freshness.

The total weight of the cooked dish is approximately 1800g, with 4 servings at around 450g each. One serving is roughly 400 calories.
