Today’s Inspiration: A Cozy Autumn Evening

As the leaves outside turn vibrant shades of red and gold, I find myself craving warm, comforting dishes to enjoy on chilly autumn evenings. That’s why I’m excited to share my latest creation with you today: a unique twist on a classic comfort food that will surely warm your soul.

For this dish, I decided to combine the earthy flavors of mushrooms with the richness of goat cheese to create a creamy and decadent pasta bake. The result is a dish that is both satisfying and indulgent, perfect for a cozy night in with loved ones.

To bring this recipe to life, you’ll need the following ingredients:

  • penne pasta (250g)
  • button mushrooms (200g)
  • goat cheese (100g)
  • heavy cream (150ml)
  • garlic cloves (2)
  • fresh thyme (1 tbsp)
  • salt (to taste)
  • black pepper (to taste)

And don’t forget to grab these essential kitchen tools:

  • saucepan
  • baking dish
  • chef’s knife
  • cutting board
  • wooden spoon

Start by preheating your oven to 375°F (190°C). Cook the penne pasta according to package instructions until al dente, then drain and set aside. In a saucepan, sauté sliced mushrooms and minced garlic in a bit of olive oil until softened and fragrant. Season with salt, pepper, and fresh thyme.

Next, lower the heat and add the heavy cream and crumbled goat cheese to the pan, stirring until the cheese melts and the sauce is smooth and creamy. Toss in the cooked pasta, making sure it’s well coated in the sauce. Transfer the mixture to a baking dish and sprinkle with extra goat cheese.

Bake in the preheated oven for about 20-25 minutes, or until the top is golden and bubbly. Remove from the oven and let it cool slightly before serving. The aroma of the mushrooms and goat cheese will make your kitchen smell absolutely divine!

This creamy mushroom and goat cheese pasta bake weighs approximately 900g in total and serves 4. Each serving is around 225g and contains roughly 400 calories.

One clever tip for this dish is to sprinkle some toasted breadcrumbs on top before baking for added crunch and texture. It’s a simple touch that takes this dish to the next level!

I hope you give this recipe a try and make it your own with your favorite ingredients or personal twists. Enjoy the cozy flavors of autumn with this comforting pasta bake!
