  • 200g shrimp, peeled and deveined
  • 1 ripe mango, diced
  • 200ml coconut milk
  • 1 red chili, finely sliced
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 lime, juiced
  • Handful of fresh cilantro, chopped
  • Salt and pepper to taste

Start by heating a skillet over medium heat and adding a splash of oil. Once hot, toss in the minced garlic, grated ginger, and sliced red chili. Sauté for a minute until fragrant, then add the diced mango and cook until slightly caramelized.

Next, pour in the coconut milk and lime juice, stirring to combine. Allow the mixture to simmer for a few minutes until it thickens slightly. Season with salt and pepper to taste.

Add the shrimp to the skillet, cooking for about 2-3 minutes on each side until they turn pink and opaque. Be careful not to overcook them, as they can become rubbery.
