Today’s Special: Spicy Asian-Inspired Stuffed Peppers

Hey there, foodies! Today, I’m excited to share a recipe that’s perfect for those chilly fall evenings when you’re craving something hearty and comforting. I was inspired to create these Spicy Asian-Inspired Stuffed Peppers after a recent trip to a local farmer’s market where I found the most beautiful bell peppers and an array of unique ingredients that begged to be combined in a new and unexpected way.

Ingredients:

  • 6 medium bell peppers (assorted colors)
  • 500g ground turkey
  • 200g jasmine rice
  • 400ml coconut milk
  • 50g red curry paste
  • 1 stalk lemongrass, minced
  • 30g fresh ginger, grated
  • 1/2 small pineapple, diced
  • 1/2 cup cilantro, chopped
  • 1 lime, zested and juiced

To start, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish and set aside.

In a large skillet over medium heat, cook the ground turkey until browned. Add in the lemongrass, ginger, and red curry paste, stirring until fragrant. Mix in the jasmine rice, coconut milk, and diced pineapple. Let the mixture simmer for about 10 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.

Once the filling is ready, spoon it into the hollowed-out bell peppers, packing them tightly. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.

Before serving, sprinkle the stuffed peppers with chopped cilantro, a squeeze of lime juice, and a sprinkle of lime zest. The combination of flavors is truly mouth-watering!
