  • 600g beef chuck, cubed
  • 400g pumpkin, diced
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp allspice
  • 1L beef broth
  • 2 tbsp tomato paste
  • 2 tbsp olive oil

Once the beef is browned, add the diced pumpkin to the pot along with the ground cinnamon, nutmeg, and allspice. Stir well to coat the meat and pumpkin with the spices. Then, pour in the beef broth and add the tomato paste, stirring to combine.

Cover the pot and let the stew simmer over low heat for about 1.5 to 2 hours, or until the beef is tender and the flavors have melded together. Taste and adjust seasoning if necessary.
