The combination of sweet pineapple, savory shrimp, and fragrant spices will transport you to the tropical streets of Thailand with every bite.

Ingredients:

  • 1 small pineapple, peeled and diced
  • 200g shrimp, peeled and deveined
  • 2 cups cooked basmati rice
  • 1 red bell pepper, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon curry powder
  • Handful of fresh cilantro, chopped
  • 1 lime, cut into wedges for serving

Kitchen Tools:

Start by heating your wok over medium-high heat and adding a bit of oil. Saute the garlic and onion until fragrant, then add in the shrimp and cook until pink. Push the shrimp to one side of the wok and crack in an egg, scrambling it until cooked through.

Next, add the cooked rice, bell pepper, and pineapple to the wok. Stir in the soy sauce, fish sauce, and curry powder, mixing everything together until well combined. Cook for a few more minutes to allow the flavors to meld together.

To finish, sprinkle fresh cilantro over the fried rice and serve hot with lime wedges on the side for a burst of citrusy flavor.
