That’s why today I’m sharing my recipe for Pumpkin Caramel Cheesecake Bars, a decadent treat that combines the rich flavors of pumpkin, caramel, and cream cheese into one indulgent dessert.

To make these delicious bars, you’ll need the following ingredients:

  • 250g pumpkin puree
  • 200g cream cheese
  • 150g caramel sauce
  • 150g graham cracker crumbs
  • 100g brown sugar
  • 100g butter, melted
  • 10ml vanilla extract
  • 5g pumpkin pie spice
  • 2 eggs

In addition to the ingredients, you’ll need the following kitchen tools:

  • mixing bowl
  • 9×9 baking pan
  • electric mixer
  • spatula
  • measuring cups and spoons

Start by preheating your oven to 350°F (175°C) and lining your baking pan with parchment paper. In a mixing bowl, combine the graham cracker crumbs, melted butter, and brown sugar. Press this mixture into the bottom of the prepared pan to form the crust.

In another bowl, beat the cream cheese until smooth, then add the pumpkin puree, caramel sauce, vanilla extract, and pumpkin pie spice. Mix until well combined. Add the eggs one at a time, mixing well after each addition.

Pour the cream cheese mixture over the crust in the pan, spreading it evenly with a spatula. Bake in the preheated oven for 30-35 minutes, or until the center is set. Allow the bars to cool completely, then refrigerate for at least 2 hours before slicing and serving.

This recipe makes approximately 12 servings, with each serving weighing about 120g. Each serving is estimated to have around 250 calories.

A unique tip for this recipe is to drizzle additional caramel sauce over the cheesecake bars just before serving for an extra decadent touch.
