As the fall season settles in, I find myself craving comforting dishes that incorporate the flavors of the season. Today, I am excited to share with you my unique Spiced Pumpkin Risotto recipe. This dish is a delightful fusion of creamy Italian risotto with the warm, aromatic spices of pumpkin pie.

Ingredients:

  • Arborio rice (300g)
  • Pumpkin puree (200g)
  • Chicken broth (1L)
  • Onion (1, finely chopped)
  • Garlic (2 cloves, minced)
  • Cinnamon (1 tsp)
  • Nutmeg (1/2 tsp)
  • Parmesan cheese (100g, grated)
  • Butter (2 tbsp)
  • Salt and pepper to taste

  • Sauté pan
  • Wooden spoon
  • Grater
  • Ladle

To start, heat the chicken broth in a saucepan until simmering. In a separate sauté pan, melt the butter over medium heat. Add the chopped onions and garlic, cooking until fragrant. Stir in the Arborio rice, toasting it slightly.

Gradually add the hot chicken broth to the rice, one ladle at a time, stirring constantly until the liquid is absorbed. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

Next, fold in the pumpkin puree, cinnamon, nutmeg, salt, and pepper. Cook for an additional 2-3 minutes, allowing the flavors to meld together. Remove the pan from heat and stir in the grated Parmesan cheese until melted and creamy.

Serve the Spiced Pumpkin Risotto hot, garnished with additional Parmesan cheese and a sprinkle of extra nutmeg for a festive touch.
