Today’s Recipe: Spicy Mango Coconut Shrimp

Hey there, foodies! I’m excited to share one of my favorite creations with you today. This spicy mango coconut shrimp dish is perfect for those who love a bit of heat and a touch of tropical sweetness in their meals. It’s a unique combination that will surely impress your taste buds!

Ingredients:

  • 500g large shrimp (peeled and deveined)
  • 1 whole fresh mango
  • 400ml coconut milk
  • 2-3 red chili peppers
  • 20g ginger (minced)
  • 3 cloves of garlic (minced)
  • 2 tbsp lime juice
  • Handful of fresh cilantro
  • Salt and pepper to taste

Kitchen Tools:

  • wooden spoon
  • blender

To start, heat a large skillet over medium heat and add the minced ginger and garlic. Sauté until fragrant, then add in the sliced red chili peppers. Stir in the coconut milk and bring it to a simmer.

While the sauce is simmering, peel and dice the mango. Add the diced mango to a blender along with the lime juice and blend until smooth. Pour the mango puree into the skillet with the coconut milk mixture and stir well to combine.

Season the sauce with salt and pepper to taste. Add the peeled and deveined shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes per side.

Once the shrimp are cooked through, sprinkle fresh cilantro over the top for a burst of freshness. Serve the spicy mango coconut shrimp hot over a bed of rice or noodles.

This dish serves 4 people and each serving weighs approximately 250g. One serving of this delicious meal is around 300 calories.

Here’s a fun tip for an extra burst of flavor: try adding a splash of rum to the sauce before simmering for a Caribbean twist!
