As we approach Thanksgiving, I wanted to share a unique twist on a classic holiday dish. This unconventional stuffing recipe combines unexpected flavors to create a truly memorable side dish that will wow your guests.

Ingredients:

  • cornbread (200g, crumbled)
  • chorizo (100g, diced)
  • dried cranberries (50g)
  • pine nuts (30g)
  • fennel bulb (1, sliced)
  • celery (2 stalks, chopped)
  • onion (1, diced)
  • chicken broth (250ml)
  • fresh sage (2 tbsp, chopped)
  • olive oil
  • salt and pepper to taste

Kitchen Tools:

  • skillet
  • wooden spoon

To start, preheat your oven to 350°F (180°C). In a skillet, heat olive oil over medium heat. Add the diced chorizo and cook until browned and crispy. Remove the chorizo from the skillet and set aside.

In the same skillet, add the sliced fennel, chopped celery, and diced onion. Cook until the vegetables are softened. Add the pine nuts and dried cranberries, and cook for an additional 2-3 minutes.

In a large mixing bowl, combine the crumbled cornbread, cooked chorizo, vegetable mixture, and chopped sage. Season with salt and pepper to taste.

Transfer the stuffing mixture to a greased baking dish. Pour the chicken broth over the top. Cover the dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the top is golden brown.

Once cooked, allow the stuffing to cool slightly before serving. This unconventional Thanksgiving stuffing is perfect for adding a touch of excitement to your holiday table.
