Unique Blueberry Pork Belly Recipe

Today, I’m excited to share a unique and flavorful dish that I recently developed. This recipe combines a mix of ingredients that may seem unusual at first, but trust me, the flavors come together beautifully in this dish.

Ingredients:

  • pork belly (200g)
  • 1 medium sweet potato
  • 1/2 cup blueberries
  • 1/4 cup balsamic vinegar
  • 1 tbsp honey
  • salt and pepper to taste

Kitchen Tools:

  • frying pan
  • oven
  • knife
  • cutting board

To start, preheat the oven to 375°F (190°C). Place the pork belly in a frying pan over medium heat and cook until browned and crispy on both sides.

While the pork is cooking, peel and chop the sweet potato into small cubes. Once the pork is done, remove it from the pan and add the sweet potato. Cook until the sweet potato is tender and slightly caramelized.

In a small saucepan, combine the blueberries, balsamic vinegar, honey, salt, and pepper. Cook over low heat until the blueberries burst and the mixture thickens into a syrupy consistency.

Once the sweet potato is cooked, place the pork back into the pan with the sweet potato. Pour the blueberry balsamic glaze over the pork and sweet potato, making sure to coat everything evenly. Transfer the pan to the oven and bake for an additional 10 minutes.

Remove from the oven and let it rest for a few minutes before serving. The combination of the tender pork belly, sweet caramelized sweet potato, and tangy blueberry balsamic glaze is a true delight for the taste buds.

Serving:

This dish weighs approximately 400g after cooking and serves 2 people. Each serving is around 200g and contains approximately 450 calories.

One tip to make this dish even more delicious is to sprinkle some chopped fresh herbs like thyme or rosemary on top before serving. The herbs add a burst of freshness that complements the other flavors perfectly.
